Beet and Berry Grilled Chicken Salad

Hello friends, Amanda here today to bring you my all-time favorite recipe for the summertime. If there’s one meal I have on repeat during these hot and sunny months, it’s this beet and blueberry grilled chicken salad. Before we dive in I would love to say congratulations to my lovely new mama friend Shannon for welcoming her beautiful baby Joy into the world. Praise the Lord for all that He has planned for their wonderful family!

If you aren’t already aware, let me be the first to break the news to you that berries are in the peak of their season and they taste better than ever! When I first saw people adding fruits to their salads I was slightly skeptical, but now that I’ve tasted this combo I’m hooked. Adding berries and other fruits to your salads not only adds a fun texture, but also the perfect pop of sweetness and an added boost of antioxidants. I don’t think it gets any better than that, no convincing needed.

There’s nothing quite as relaxing as sitting outside on a nice summer day,,soaking up the sun, and eating a salad as big as your face loaded with all the berries your heart desires (can you tell I’m speaking from experience?!). You can easily replace the blueberries with your strawberries, blackberries, whatever suits your fancy.

Of all the things I have on my summer bucket list, berry picking is a top priority! I have always wanted to pick my own berries and then transform them into something delicious; there’s just something about putting in the extra work that I think would make them that much more enjoyable.

Beet and Berry Grilled Chicken Salad

Ingredients

  • 1 beet (to save time, precooked packaged beets work great too)
  • 1/3 cup fresh blueberries
  • 1 small chicken breast
  • 1 cup spring mix or greens of choice
  • 2 Tbsp feta cheese

Optional Ingredients

  • Mandarin oranges (pack in a flavorful, juicy punch)
  • A little balsamic vinaigrette (or dressing of choice)
