Oven-Roasted Asparagus with Sesame Seeds

Are you in a side dish rut? Many families I work with will say something like… “We either have carrots, green beans or maybe a vegetable medley IF we have a few extra minutes”. And there’s nothing wrong with a steady rotation of staple veggies, BUT if you’re looking for a SIMPLE side dish recipe to spice up weeknight mealtime- here you go.
Oven-baked is the simplest way to make slightly crunchy, flavorful asparagus- no stirring, mixing or turning-over mid-bake required. I used to bake asparagus with pine nuts, and still do upon occasion, but I found my asparagus to pine nut ratio was a little off….. and have you seen the price of pine nuts?! SO in effort to keep it simple, keep it cheap and still have some nuttiness– I sprinkled toasted sesame seeds on asparagus before baking. It’s the perfect toasty-nutty-sesame flavor and simple enough to where you just may find it in your weekly rotation of veggie side dishes.
KISS Tip #1: Take one asparagus spear and find the weak spot- where it breaks once bent. This is usually 2-3 inches from the bottom. Use this stalk next to the bunch and cut in that exact location to know how much needs to be cut off. OR just cut 2-3 inches off- you can’t mess this up.
KISS Tip #2: Squeeze half a lemon on asparagus (after cooking) to give a refreshing zesty flavor.

KISS Oven-Roasted Asparagus with Sesame Seeds

Ingredients

1 1/2 lb fresh asparagus
2 Tbsp toasted sesame seeds
Coconut Oil 
Salt & Pepper


Instructions

1.) Preheat oven to 400 degrees.
2.) Trim bottom 2-3 inches off all asparagus spears (see KISS Tip above).
3.) Place asparagus on foil-lined greased baking sheet and lightly spray asparagus with coconut oil, or your favorite spray oil.
4.) Evenly sprinkle sesame seeds on asparagus, followed by a light dusting of salt and pepper and bake for approximately 10 minutes.
