Now, as a dietitian I’m inclined to “revamp” “healthify” “lighten” or “tweak” most indulgent recipes, but not this one. Butter, peaches in heavy syrup.. that’s right, heavy syrup, and you know this is gonna be a la mode before it’s all said and done. If I’ve disappointed you by my lack of creating a “healthy” peach cobbler, I’m not sorry. We can all indulge from time to time :).
Time: 10 minutes hands on, 45 minutes in oven
1 stick butter
1 cup flour, all-purpose
1 cup sugar
1 cup milk
1 heaping tsp baking powder
1 pinch salt
1 29oz can peaches, in heavy syrup
1.) Preheat oven to 350 degrees. Place 1 stick of butter in 9X13 baking pan or glass dish and heat in oven for about 5 minutes or until completely melted.
2.) Mix flour, sugar, baking powder and salt in medium bowl.
3.) Add 1 cup milk to dry ingredients and mix well.
4.) Pour batter on melted butter, do not stir.
5.) Spoon peaches on batter layer and drizzle with any leftover syrup. Again, do not stir.
5.) Bake for 45 minutes, remove and let cool 15-20 minutes (if you can wait that long). Add a scoop of vanilla ice cream for the full experience my dad always enjoyed :).
