Pumpkin n’ Protein Smoothie Bowl

It seems I’m always late to the food trend party. Took me years to try matcha, forever and a day to make overnight oats and equally as long to create energy bites. And here I am again… looking at Pinterest in all its smoothie bowl glory, thinkin’ “It’s time I try and figure out what all this smoothie bowl hype is about”.
I couldn’t be more excited about creating a fall-inspired smoothie bowl. And since it’s a cold recipe- all the more reason to enjoy it year round, right?
One of the great things about smoothie bowls is it causes us to slow down a bit… sure, drinking a smoothie on-the-go is a must sometimes (or let’s get real.. like most the time) BUT it’s so nice to just sit down for a few minutes with a meal or snack and savor the flavor.

Side note- yes, I’m well aware you can see my reflection in the spoon. Honest confession- I’m learning to use my tripod and it’s a work in progress. Or rather, I’m a work in progress ;).

Doesn’t that make you just want to just run and play in leaves? Those autumn colors have created a longing for cooler weather… but I have to sit tight because I live in Texas.

I used a scoop of my favorite pea/rice protein powder in this smoothie bowl. You can also add a tablespoon of peanut or almond butter for some nutty flavor and additional protein/healthy fat boost! And….. don’t forget to add some cinnamon for the perfect final addition!


KISS Pumpkin n’ Protein Smoothie Bowl
Serves: 1
Time: 5 minutes

Ingredients
1 cup canned pumpkin puree (or fresh, if you’re fancy like that)
1 large ripe banana, frozen
1/2 cup unsweetened coconut-almond milk*
1 scoop your favorite protein powder (unsweet and/or vanilla works well)
1 Tbsp natural peanut butter or almond butter, if desired

Topping options: pumpkin seeds, granola, chia seeds, cinnamon, walnuts, dried fruit, cinnamon, sliced pears, fresh banana slices, whatever sounds good to you!

Instructions
1.) Combine all ingredients in Vitamix or blender and blend until smooth.
2.) Pour ingredients in bowl, add desired toppings and enjoy!

*1/2 cup or less depending on how thick you like your smoothie bowls

  1. Pumpkin everything! Looks very good, and I love all the variety in the topping options. I really enjoy adding pepitas to bowls, smoothies, salads, you name it. Great texture, I love them!

  3. This recipe looks so easy! I haven’t made smoothie bowls either, guilty. I guess I’ll just make yours and consider myself “trendy.”
