January brings all the diets and meal plans into the limelight, doesn’t it? I’m not one to buy into (or recommend) crazy fad diets, but I do personally find an occasional (1-2x/year for me personally) Whole30 to be beneficial. I have a fair amount of recipes that happen to be Whole30 compliant without even trying and this Whole30 Dill Chicken Salad is one of them! If you’re curious about why I like Whole30, you can find a post all about the revelations I’ve experienced (none of which are related to body composition) here.
The Inspiration Behind the Recipe
I first made this recipe for my best friend’s baby shower last August. She had the cutest woodsy-ish theme and her theme was the inspiration for the dill sprigs. And it’s a good thing, because these fresh dill sprigs are one of my favorite parts of the recipe!
Whether you’re packing a lunch, planning a baby shower menu or just looking to spruce up your Whole30 recipe options, this Whole30 Dill Chicken Salad will be your new favorite. It’s such a nice balance of healthy fats from avocado oil mayo (I love Primal Kitchen’s) and almonds, lean protein, a hint of sweetness from grapes, some crunch from celery and extra boost of freshness from the dill!
Creative Ways to Enjoy Chicken Salad
KISS Tip: Enjoy this Whole30 Dill Chicken Salad on a bed of greens or if not on a Whole30, I actually love to stuff some of the chicken salad inside Siete Foods Grain Free Taco Shells! Such a fun take on Taco Tuesday, right?
Regardless of how you serve up this salad, be prepared for everyone to love it, ask for the recipe and want seconds. It’s so simple yet so delicious. It will probably be my new go-to to bring to baby or bridal shower and it sure is handy when I’m on a Whole30!
